Jacob Ellis Named Executive Chef
The Adobe Bar & Grille at the Arizona Biltmore Golf Club recently welcomed Jacob Ellis as Executive Chef. Chef Ellis will oversee culinary and banquet operations at the mid-town Phoenix restaurant and club, which reopened to rave reviews in May following a multi-million-dollar clubhouse expansion and renovation.
Ellis has 18-plus years of culinary arts, restaurant management, and guest service experience working at popular restaurants, resorts and golf clubs. He most recently served in dual roles as executive chef and food & beverage director at Rancho De Los Caballeros in Wickenburg, Ariz., where he spearheaded the opening of 19, a new fine-dining experience at the historic resort. Early in his career, Ellis studied under Celebrity Chef Beau MacMillan at Sanctuary Camelback Mountain, before moving on to lead the culinary operations at several high-end establishments, including Top of the Rock in Tempe, Ariz., the St. Regis Hotel in San Francisco, Calif., and Oak Tree Country Club in Edmond, Okla.

Born and raised in Fountain Hills, Ariz., Ellis has a bachelor’s degree in nutrition: food and tourism management from Arizona State University and an associate’s degree in culinary arts from Scottsdale Community College.

New Clubhouse Opens to Rave Reviews
In May 2024, the Arizona Biltmore Golf Club unveiled its new 19,400-square-foot clubhouse – home to the Adobe Bar & Grille, a grab-and-go market known as The Pantry, a state-of-the-art golf simulator room, as well as 6,000 sq. ft. of event space in The Ballroom. Designed as a luxurious estate conversant with its immediate neighbors by Douglas Fredrikson, AIA, and Alexandra Lemos of Phoenix-based Douglas Fredrikson Architects, the clubhouse features Frank Lloyd Wright-inspired architecture with a blend of modern southwest design. Many notable elements of the neighboring Arizona Biltmore Resort were incorporated into the design, including the signature concrete Biltmore block prominent throughout the resort.
The new Adobe Bar & Grille features a center bar, communal tables for dining and swapping golf stories, multiple televisions and large Renlita doors that open to an expansive patio with views of the Estates Course and downtown Phoenix. The Bar area includes a piano to provide a lounge-like atmosphere, regularly entertain guests and add ambiance to the dining experience. Contiguous from the Bar, the Adobe’s stylish dining room has dynamic views of the skyline for neighbors, resort guests, golfers and non-golfers to enjoy.
